I firmly believe that we have to take an active role in keeping our body healthy. It is our duty to preserve and keep our body healthy.

We can no longer continue to poison our bodies with foods that are loaded with pesticides and preservatives. I follow the 80/20 rule — 80% raw and 20% cooked as well as 80% alkaline and 20% acidic food. In my cooking classes, I offer tips and guidelines how to create and maintain a satisfying and healthy diet in a simple and creative way. Please let me help you in your fight to be well – with a holistic approach to taking some proactive steps to support your struggle for health and wellness.

My mission is to help you achieve and maintain good health, and aid in the prevention of disease through the use of healthful, all natural foods.



About Nena Niessen


Nena‘s cooking experience began when she was twelve years old. Born in Nicaragua in the small town of el Sauce, so small that they didn’t even have a doctor. Their doctors were their own parents and the pharmacy their own backyards.

Coming from a family of seven children, she learned how to cook at a very young age. By age fourteen, Nena was already considered an accomplished chef in her mother’s kitchen using fresh, healthful ingredients.

At age twenty-four Nena made it to the United States, where she followed her twin passions-love for cooking and keen interest in health that could lead to a career that was not only satisfying, but could offer an important contribution to people. Ever since she has become a Certified Natural Health Professional and certified in Nutritional Microscopy. Nena is also certified in plant-based nutrition from Cornell University.

A major influence in Nena‘s life, is Dr. Robert O. Young. author of ‘The pH Miracle’ book. From him she has learned about the importance of our diets, being more alkaline than acidic in nature, specifically given the fact that one in every two men and one in every three women will suffer from cancer in their lifetimes.

My father died of cancer at age 60 and my brother of a heart attack at age 45. I know how it feels to lose someone close and how important it is that we take matters of diet and health into our own hands by educating ourselves and learning to cook healthful meals. Our parents taught us to eat a certain way and are now suffering and dying at early ages of heart disease, diabetes and cancer-all diet-related illnesses. Each of us needs to change our diet habits for our own and our family’s sakes.
